As a southern California native, my everyday life calls for tequila on the rocks, crunchy beef tacos, and roasted corn salad.  Considering the Mexican fare in NYC ain’t quite what it is out west, I like to make my own Mexican food to get my fix.  In honor of Cinco de Mayo (ay yi yi), I wanted to share a creative recipe I came up with this weekend that brings the heat, but is balanced out nicely with the citrus fruit of the season!

This spicy grapefruit salsa provides a delicious twist on traditional Mexican fare and is especially delicious on fish tacos.  The combination of citrus (hello, limes) with beer battered or grilled fish is classic – so this unique salsa with a grapefruit base does not disappoint.  I made this citrusy and spicy treat using my BELLA Sport Rocket Blender, the adorable line of kitchen appliances from BELLA and available at Walmart.  I have the Linea Collection in white, and the retro, throwback chic of the appliances makes my countertop super stylish.

This salsa can be whipped up using the blender in 5 minutes flat, but I do like to let it marinate in the fridge for an hour or so before serving to guests to let the flavors really sink in.  Recipe and procedure below.  Hope you enjoy it this Cinco de Mayo!

Spicy Grapefruit Salsa

[tabgroup layout=”horizontal”] [tab title=”Ingredients”]1 large grapefruit, chopped

1 orange, chopped

1/2 lime, chopped

1 tomato, chopped

1 jalapeno, chopped

Half a red onion, diced

1/2 t. sugar

1 tablespoon salt[/tab] [tab title=”Procedure”]1. In the BELLA Rocket Blender, quickly chop the grapefruit, orange, lime individually. Allow the juice from the grapefruit, orange, and lime drain off the fruit and reserve separately.

2. Chop the tomato, jalapeno, and onion in the BELLA Sport Rocket Blender individually. Be sure to remove the seeds and stem from jalapeno before chopping. Combine all chopped ingredient into a bowl once minced in the blender.

3. Add sugar and salt to taste. Let salsa marinate in refrigerator for one hour before enjoying. Add a bit of the reserved grapefruit, orange, lime juice to refresh the salsa if necessary.[/tab] [tab title=”Notes”]Difficulty Level: Easy[/tab] [/tabgroup]
