3 a.m. and you’re up like clockwork. It’s the universal witching hour for late night munchies. Somehow, you find yourself half awake in the kitchen. You grope around in the dark for the fridge. Found it! Cereal? Nah, had that last night. Apple slices and carrot sticks? Ugh, I wish! Chocolate. Chocolate is definitely what I really want.

We feel you. Chocolate is almost always the way to go.

So, what to do? Baking? No, not this early. But, what if you could whip together an almost identical equivalent? You know, molten Nutella chocolate mug cakes à la microwave? This is, after all, a time sensitive, stomach-demanding mission.

Well, why the hell not?

You will need:

  • A Microwave
  • A sassy mug (like the one pictured above) or a bowl
  • 1/2 tsp of baking powder
  • 1 egg
  • 2 tbsp of milk
  • 3 tbsp of Nutella
  • 4 tbsp of flour or hot cocoa powder of choice
  • 4 tbsp of sugar

Mix your dry ingredients in the mug. Then, add the egg, milk, and Nutella. Stir well. Some recipes recommend 1-2 teaspoons of vegetable oil. Through much experimentation, however, we have found it unnecessary. Our mug cake turned out perfectly gooey and delicious without it. After mixing all the ingredients, microwave it on high for 60 seconds. If the cake is not fully cooked, continue to microwave in 15 second increments. Feel free to play with the microwave timing. There usually is a big variance in microwave power. Remember, though, the key is not to overcook your cake. You want it to still have a fudgey molten-like middle. Keep in mind that the mixture will bubble. To avoid mess, it better to opt for a bigger mug or bowl. Either that, or halve the recipe.
