I often come home at the end of the day completely beat, wanting a great meal but finding it difficult to motivate myself into the kitchen. I know you can relate, obviously. I often think about my sister who works and is a full-time mom to my almost 2 year old nephew Dylan during these moments, wondering how she manages to DO IT ALL every single day. The woman makes dinner from scratch at least 6 nights a week, and Dylan is a full-energy little guy.
I think about my own mother too, a fiercely fabulous woman who raised the three of us and also managed to deal with all of our homework, soccer practices, emotional needs, and friends and also get nutritious dinners on the table every single night. The act of feeding the people you love well is quite meaningful to me, a deeply held tradition in my family that I take seriously. We all have our things, right? 🙂
So what’s the point of all this? I suppose that the women in my life remind me that my own stuff is simple in comparison and that I should get in there a cook something healthy for my boyfriend and I, but also a reminder that of how strong we all really are. When it really comes down to it our things drive us to go above and beyond, for ourselves and families and friends. No matter what weighs her down, my sister actually CAN do it all. #ActuallySheCan! No matter what weighs my mother down, my mother actually CAN do it all. #ActuallySheCan! And no matter what weighs me down, I can still do it all too.
But, we can all use a little help sometimes. I’m a chef by trade and part of my job is coming up with delicious recipes to share with you. I like to cook for hours, spending the better part of an afternoon and evening in the kitchen coming up with complex and creative meals to enjoy. I know that some nights though that in order to do it all that day, I have to go a little easier on myself (and you guys, ha). So today I’m sharing a really easy, really delicious, and really nutritious meal you can make from scratch for you and your family any night of the week in about 20 minutes. Make it the next time you’re feeling stressed, or tired, or too busy. It will be more than just a delicious meal; it will be a reminder that you actually can do it all too!
Linguine with Spicy Shrimp[ingredients title=”Ingredients”]
- 1 Box of 100% Whole Wheat Linguine
- 1.5 lbs of deveined shrimp (you can buy them this way)
- Olive Oil
- 3 garlic cloves, chopped
- 2 bunches of arugula
- 1/2 teaspoon crushed red pepper
- Zest from 1 lemon + the juice
- Kosher Salt
- Black Pepper
- In a pot of salty, boiling water cook your linguine to al dente. While it’s cooking chop your garlic, zest your lemons, and wash your arugula.
- Once the pasta is cooked, drain but reserve about 1/2 cup of the hot cooking water. Wipe out the pan and heat up some olive oil in it.
- Add the garlic first and cook for half a minute, then the shrimp (season them with a bit of Kosher salt), and red pepper flakes and salt and pepper to flavor. Add the lemon juice. Cook for about 3 minutes or until the shrimp is just about done.
- Add the pasta back to the pan along with the zest, arugula, and 1/2 cup hot cooking liquid. Stir it all together gently so a sauce forms over the noodles and serve.
