Curb Your Carb Craving With This Appetizing Sweet Potato Pasta Recipe!

There’s nothing like enjoying a big bowl of pasta on your cheat day but what if you have a carb craving mid week that you just HAVE to satisfy?! I’ve found the solution to trick your body and it’s a Sweet Potato Pasta recipe!! Your brain will totally think you’re loading up on heavy carbs when really you’re fueling your body with the nutritious superfood that is sweet potato!

High in fiber, sweet potatoes are also filled with numerous amounts of vitamins and minerals such as calcium, iron, vitamin C and most B vitamins. This root vegetable is also high in an antioxidant known as beta-carotene which once consumed converts into vitamin A. Still looking for another reason to add sweet potato into your diet? It’s actually recommended to eat the peel (whew one less step in the kitchen!) because it contains antioxidants that help to reduce the risk of cancer! So a part from being delicious and being able to be cooked in a variety of ways, sweet potatoes are SUPER good for ya hence why it’s called a superfood!

In just 20 minutes, you can whip up this recipe and give your taste buds a pleasant treat! Don’t worry if you don’t have a spiralizer to make the noodles, Sweet Potato Noodles are now available in health food stores!

If you’re lookin’ to add some extra flavor to this recipe then I suggest loading up on toppings such as garlic, kale, roasted tomatoes, grated cheese or even sautéed mushrooms! Have fun with this Sweet Potato Pasta and customize it to your liking! The possibilities are endless!

Yields1 Serving

 1 Yam or sweet potato medium in size, long in shape
 1 tbsp Grass fed butter unsalted
 6 Sage leaves (preferably organic)
 Sea salt to taste
 Pepper to taste

Wash the sweet potato in filtered water and peel.

Slice sweet potato or yam lengthwise as thinly as possible-a spiralizer is the best tool to use! (If you want to skip this step then simply buy Sweet Potato Noodles at your local health food store.)

Cut the long, thing sweet potato slices into even strips about 1/4 inch wide. Set aside.

In a large, sauté pan, melt butter on medium-low heat and add the sage leaves. Watch the butter closely as the sage begins to brown (careful to not let the sage burn!)

When the sage is crisp, remove and set aside. Add the sweet potato pasta strips to the butter and heat thoroughly. Stir and toss for about 2-3 minutes. When tender and warmed through, arrange in a plate or bowl and garnish with the fried sage or add toppings of choice!
