Switch Up Your Breakfast Routine With This Cauliflower Flatbread Recipe

This past weekend I decided to skip going out for brunch and make a breakfast inspired cauliflower flatbread and let me tell you, it was freaking delicious!

If you’ve been following my stories on the ‘gram, you may have noticed that I’ve been on a little cauliflower kick lately! This cruciferous vegetable is so good for you because of its high fiber and vitamins content so if you’re having any digestive problems then I suggest hopping on the cauliflower train ASAP!

Alright now back to this amazing gluten-free, low-carb, flatbread recipe I whipped up a few days ago. Instead of making a cauliflower flatbread from scratch, I decided to cut some time (and mess) by trying the Cauliflower Pizza Crusts from Cali’flour Foods (not an ad!) and they actually tasted really good! I chose to top my crust with bacon, red onion, arugula, cheese and a fried egg but the options are limitless so don’t be afraid to get creative with your own toppings!

If you’re tired of eating the same ol’ thing for breakfast (nothing wrong with that!) or have a little more time to spare in the morning, then ditch the oatmeal and try this new recipe!

Yields1 Serving

 1 Cali’Flour Foods Cauliflower Pizza Crust (yay no time wasted making the crust!)
 1 Egg
 1 Red Onion
 3 Slices of bacon
 2 cups Arugula
 1 cup Cheese (your preference, I chose mozzarella!)

Bake cauliflower crust for 10 minutes at 375, let cool for 10 minutes.

While your crust is baking/cooling, start preparing your toppings. Cook up some bacon, thinly slice your onion on a mandolin then cook onion in left over bacon fat! YUM!

Once the crust has cooled, spread toppings all over (bacon, onion, cheese) then cook again until everything is nice and melty!

While crust is in the oven for round two with the toppings, cook one fried egg. Once you take out your cauliflower flatbread, place arugula and fried egg on top!

Simple as that...enjoy!!
