It’s day I don’t know what of my elimination diet and the sugar monster in me finally had enough and wanted a sweet treat! Cutting dairy has definitely tested my self-discipline but luckily there are plenty of alternatives so finding a recipe for a gluten and dairy free dessert was actually not that difficult!
I’m a HUGE fan of ice cream but the non-dairy pints at the store just weren’t doing it for me so I decided to try making “nice cream!” Nice cream is essentially a vegan ice cream made out of one simple ingredient…bananas! This is hands down the easiest,most satisfying dessert I’ve ever made and I can’t believe I’ve eaten ice cream any other way before! Literally all you need to do is blend frozen bananas and voila, nice cream! I of course love this super fruit but I wanted to give this nice cream a little more spunk and make it a dark chocolate flavor!
With just 4 ingredients:bananas, maple syrup, cocoa powder and vanilla extract, you’re only a few minutes away from indulging in a cool, creamy bowl of nice cream without any guilt!
Toss bananas into blender & blend until they turn into a crumbly mixture.
Add maple syrup and vanilla. Blend until creamy making sure to scrape down the sides of the blender as necessary.-get it all in there!
When you get a smooth mixture, add the cocoa powder and blend.
If you prefer soft ice cream you're good to dive in immediately. If you want your ice cream firm and scoopable: pour into an airtight container. Freeze for about 4 hours or until completely frozen. Allow to thaw for 10 minutes before scooping.
Enjoy loves! If you have left over nice cream,store it in an airtight container in your freezer, it'll be good for up to 1 week!
