Paleo Pancakes For The Breakfast Win!

Breakfast in the morning, breakfast for lunch, breakfast for dinner…no matter what time of day it is, I’m always down for some good ol’ breakfast food! 

I’m usually an oatmeal or frittata kind of gal but every so often I crave light, fluffy, golden brown PANCAKES drizzled (more like smothered) in maple syrup! I’ve tried my best to stay away from these bad boys since I’m so sensitive to gluten but luckily there is an alternative for everything and for that I give thanks to coconut flour and this recipe for Paleo pancakes!

Keeping it grain, gluten and dairy free, this breakfast classic uses 4 main ingredients: bananas, eggs, coconut flour & vanilla! The fun part is getting to customize your pancakes with your favorite toppings such as blueberries, dark chocolate chips, strawberries,pecans, bananas..whatever your heart desires, sprinkle a little bit of it on top! 

Whether you’re treating yourself or winning extra points with your babe by bringing them breakfast in bed, these Paleo pancakes are guaranteed to get mouths watering!

Yields1 Serving

 1 Ripe Banana -mashed
 2 Eggs - medium
 1 tbsp Coconut flour
 1 tsp Vanilla extract
 2 tbsp Coconut Oil
 Dash of Cinnamon
 Dash of Maca

Mash the banana until lump free. Add the eggs and mix together with a fork.

Add the coconut flour,vanilla,cinnamon and Maca- mix with the fork then let sit while the coconut flour thickens the mixture ( you can also ditch the fork and use a mixer if you find it easier)

Using medium heat, heat a non-stick pan and add about 2 Tbsp coconut oil.

Pour desired pancake size into pan and cook for about 2 minutes on each side making sure to get that nice golden brown color and firm edges. (If necessary, add 1 Tbsp coconut oil after each batch of pancakes)

Drizzle a little bit of maple syrup on top and add your final touches with toppings of choice!Enjoy!
